If you do spicy soup, I would pair that with a smooth but sweet Zinfandel, like a Rombauer or Artezin (from Hess). I would match up a very mild Pinot (J Wine would be perfect) for garlic soups and a spicy Syrah for the milder soups, like Echelon’s Syrah.
